The importance of this research paper is to clarify, discuss and understand the issues that impacts beast meat quality in poultry. The three main issues the poultry industry has been faced with is white striping of breast muscle, woody breast, and deep pectoral myopathy. These issues is not a medical or health issue for humans’ consumptions but, a quality issue of consumption. The white strip of breast muscle is strips parallel to the muscle fiber. It is mostly found in breast muscle fillets, but also be found in thighs of chickens. The issue with white striping of breast muscle is the protein having a poor ability to bind to both unprocessed and marinated meat.
Wooden breast is a muscle myopathy that results in the necrosis of muscle fibres with macrophage infiltration. (Velleman, 2015) Many people call it woody breast because of the texture of the breast. The texture of the breast is more hard and elastic due to the hard fibers inside, which makes consumers put more energy in chewing the breast. Many …show more content…
