1.1 A brief history of dessert
Dessert is the final course of the meal that should complement previous courses. Dessert is defined by most dictionaries as a sweet food eaten after a meal. The term "dessert" can apply to many foods, such as cakes, tarts, cookies, biscuits, gelatines, pastries, ice creams, pies, puddings, custards, and sweet soups. Fruit is also commonly found in dessert courses because of its naturally occurring sweetness. Some cultures sweeten foods that are more commonly savoury to create desserts. (Wikipedia, 2016)
In the Middle Ages rich people ate desserts like preserved fruits, jelly and wafers made from batter. The Italians have been eating panettone since at least the 15th century but its origins are lost in legend. The Romans knew that eggs could be used for binding.
