Preheat oven to 350 degrees and grease a glass or nonstick baking dish. In a non-stick or cast iron pan heat oil or lard on a medium heat. Place each white or yellow corn tortilla in the hot oil one at a time and place on a paper towel to drain excess oil. Place the tortillas in a warmer or cloth and wrap them to stay warm. “If you are feeling homesick, this dish will make you feel like you are in Texas” (Fain 153). Now, dip the tortillas in the chili sauce and remove excess. The tortilla must be soft and pliable to add the ingredients. Take each tortilla and place a ¼ cup of cheddar cheese, diced onions to your liking, and roll the tortillas and place in baking dish. Top enchiladas with remaining chili sauce, cheese and onions. Bake them for 15 minutes until bubbling or golden brown.
