This was disease that was associated with eating meat that contained a nematode (roundworm) from the genus Trichinella. The agent of trichinosis is Trichinella spiralis, which is found in many carnivorous and omnivorous animals. The disease occurs when a human ingests an undercooked piece of meat, then the larva gets released into the small intestine, which then grows into an adult inside the small intestine, then releases its larva into the mucosa, and the larva becomes encysted in the striated muscle (book). The best way that it could be prevented is by making sure that meats are cooked to safe temperatures. Food thermometers can be used to check the temperature of the meat to ensure that it is cooked to a proper temperature for consumption. For whole cuts of meat, it should be cooked to 145F at the thickest part of the meat. For ground meat, it should be cooked to 160F. For wild game, it also should be cooked to 160F. For all poultry, it should be cooked to 165F, and be rested before eating (PhD, C. P.).
