It is one of the most basic yet important aspects of hygiene. Washing your hands thoroughly! It is a rather effective way to reduce the chance of contaminating food with bacteria. Personally every time I see a fly sitting on my food, I do not eat it and get it changed, however most people take this very lightly and just shoo off the fly.
People are unaware that one of the most deadly carriers of diseases are flies, which are often seen hovering over food and sitting on sweets. The reason being, unattended garbage bags not only create stale air but also attract flies and mosquitoes. You may also have often seen flies hovering on animal excretion. The flies sit on animal feces which are full of deadly parasites and bacteria. The porters involved in the delivery and collection of food trolleys are deemed to be ‘Food Handlers’ and hygiene begins from that part itself.
Simple kitchen practices, I believe can make a remarkable difference to the hygiene levels of a restaurant may it be a fine dine or a roadside stall.
Some practices that I could think of are as under:-
Thoroughly wash and dry your hands frequently while handling food.
Make sure your hands are dried with a clean towel or disposable paper towels.
Don’t smoke, chew gum or spit in a food handling area.
Avoid coughing or sneezing over food or where food is prepared.
Wear clean clothing, such as apron, mask, glove, steel toe shoes etc.
Keep your personal items away from where food is prepared.
If you have long hair, tie it back and cover it.
Keep your nails short so that they are easy to clean, and don’t wear nail polish as it can chip into the food, contaminating it.
Avoid wearing jewellery.
If you have cuts or wounds, make sure they are completely covered by a waterproof bandage.
Wear disposable gloves over the top of the bandage if you have wounds on your hands.
