Monosaccharides
Simple carbs: Sweetness depends on arrangement of atoms.
1) Glucose: Blood Sugar (mildly sweet)
2) Fructose: Same formula as glucose but different structure. (VERY SWEET)
3) Galactose: Least sweet (only I'm a few foods)
Disaccharides
Simple Carb -- Put together or taken apart by either Condensation or Hydrolysis.
1) Maltose: Starch breakdown, in digestion and fermentation.
2) Sucrose: Sweetest because it contains fructose.
3) Lactose: Principle carb of milk & provides half if energy in tax-free milk.
