When some people think of Christmas, they think of presents, Santa, and decorating the Christmas tree. Not me, I think of the candies that my grandmother would make. My favorite that she made still remains the homemade “turtles”. Although I haven’t made them recently, I can still remember what they taste like. My “turtle” recipe is my grandmother’s recipe. Prepared with my grandmother’s homemade caramels, these will melt in your mouth. First you will need to get the equipment and ingredients you will need to make the caramels. Several pieces of equipment that are necessary: an oven, a six quart heavy saucepan, a candy thermometer, a wooden spoon, wax paper, a can opener, a measuring cup for dry ingredients, a measuring cup for liquids, a glass loaf pan for melting chocolate, and a few nine by thirteen inch cookie sheets. You will need to turn the oven on to two hundred degrees. Tear off some parchment paper to fit the empty cookie sheets. Place three pecan halves with the ends together, you should be able to get twelve to sixteen sets depending on how close you place them. Top each of the pecan sets with a caramel. This always tempts me to pop a caramel in my mouth, I always justify this behavior as taste testing. After doing this you will need to get the milk chocolate ready to use. Put your chocolate in the loaf pan and put it in the oven on one side and put a sheet of pecans with caramel on the other side. Once the chocolate is melted and the caramels you will pull both out of the oven and drizzle the chocolate over each one. In the meantime you will need to keep putting the other sheets of pecans in the oven to melt the caramels. Allow the candies to cool, if you live in a cooler state you can put them outside to cool
